This Crockpot Eggroll in a Bowl is everything you love about the inside of an eggroll — savory meat, tender-crisp veggies, and bold Asian-inspired flavors — without the deep-frying or fuss. It’s a comforting yet fresh dish that comes together easily in the slow cooker, perfect for busy weeknights or meal prep.

The first time this hit the dinner table, it was a complete surprise how quickly the bowl emptied. It’s one of those meals where everyone goes back for seconds and you’re left wishing you made a double batch. It’s light, flavorful, and hits all the right notes — salty, savory, and just a bit sweet.

Ingredients:

  • 1 lb ground pork (or ground turkey, chicken, or beef)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1 tsp ground ginger)
  • 1 (14 oz) bag coleslaw mix or shredded cabbage
  • 1 cup shredded carrots (or use more coleslaw mix if already included)
  • 1/4 cup low-sodium soy sauce (or coconut aminos)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha or chili garlic sauce (optional for heat)
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions:

  1. Optional Step – Brown the Meat in the Crockpot: If your slow cooker has a sauté setting, cook the ground pork with the onion until browned. If not, just add it in raw — it will cook fully during the slow process.
  2. Add Everything Else: Stir in the garlic, ginger, coleslaw mix, carrots, soy sauce, vinegar, sesame oil, sriracha (if using), and black pepper.
  3. Cook: Cover and cook on low for 4 hours or high for 2 hours, until the pork is cooked through and the veggies are tender but not mushy.
  4. Finish and Garnish: Stir well, taste for seasoning, and garnish with green onions and sesame seeds before serving.

Notes:

  • Serves 4–5 as a main dish, or more if served over rice or noodles.
  • For a heartier meal, serve over jasmine rice, cauliflower rice, or even ramen noodles.
  • Ground turkey or chicken work beautifully for a lighter version.
  • Leftovers store well in the fridge for up to 4 days and make great lunches.
  • Add extra veggies like bell pepper or mushrooms for more bulk.

Yield: 4-5
